On Shrove Tuesday each year, my Mum would cook pancakes. These would be served with a sprinkling of sugar and half a lemon for us to squeeze over the pancake. This was a rare occasion when a lemon, or two, would be in the house.
Here is my Mum’s recipe for a pancake. Ingredients: 1 egg 112grms of flour half a pint of milk. Drop the egg, unbeaten, into a bowl holding the flour. Gradually add half the milk, stirring all the time to avoid lumps in the mixture. Beat until the mixture is smooth and light. Beat in the rest of the milk and, if possible, allow to stand for two hours. Fry a little at a time in clarified butter, first on one side and then on the other. Turn the cooked pancake on to a sugared paper and then sprinkle te4 top side with sugar. Roll up the pancake and keep it warm until the other pancakes are made. Serve with a slice of lemon.
